Produced only with the traditional grapes (70% Pinot Noir and 30% Chardonnay) used to make true Champagnes. Also\, the traditional method for making Champagne is used for this Cremant. It is aged at least 18 months on the lees\, which is more than most entry-level Champagnes. In blind taste tests\, people choose this Cremant over many famous Champagnes. “ \n  \n2022 Paul Jouard Bourgogne Aligote \n“This wine opens with aromas of green apple\, lemon peel\, and crushed white flowers\, underpinned by a chalky minerality and just a whisper of fresh herbs. On the palate\, it is zippy and precise\, with flavors of citrus\, pear skin\, and a touch of saline that leads into a clean\, mouthwatering finish.” \n  \n2023 Francois Servin Chablis \n“The grapes are from the Pargues vineyard\, formerly classified Premier Cru\, but not being worked when reclassification was done following WWII. Stainless steel fermented\, with 100% malolactic completed. It’s basically Premier Cru quality at a village-level price. Since this is Francois’ personal\, entry-level wine\, we nickname it ‘Special Reserve’. Wonderful balance\, with bright floral\, green apple and tropical fruit notes\, backed up with crisp acidity and a nice streak of minerality. Textbook Chabis.” \n  \n2022 Paul Jouard Santenay Village Vieilles Vignes \n“On the nose\, the 2022 Santenay Vieilles Vignes reveals aromas of ripe red cherry\, black raspberry\, wild strawberry\, and delicate floral notes of violet\, intertwined with hints of clove and forest floor. The palate is medium-bodied and well-structured\, showcasing juicy red and dark fruit flavors balanced by refined tannins and lively acidity. The finish is long and mineral-driven\, reflecting the distinctive terroir of Santenay.” \n  \n2022 Domaine Georges Joillot Pommard\, Cote de Beaune \n“A vibrant expression of Pinot Noir from Superior Jurassic limestone soils. The nose reveals fresh aromas of red currant\, cranberry\, and wild strawberry\, complemented by subtle floral notes and a hint of crushed stone. On the palate\, the wine is lively and precise\, with bright acidity and fine tannins that lend structure. A touch of oak brings a delicate spice and adds depth without overshadowing the pure\, mineral-driven fruit.
